Ayurvedic principles, when applied to cooking include using fresh and organic vegetables and freshly ground spices with healing herbs, cooked at a certain time of the day using mantras and vibrations as well as certain specific oils like Sesame, 'Sarson', 'Ghee' or clarified butter.
The food itself can be raw, vegan, lightly steamed, and even stir fried or baked depending on the spices and dependent on the body constitution we are cooking for.
People recovering from illness, flu, cold or suffering from sinuses are advised an Ayurvedic Vegan Diet with the exception of herbal clarified butter or 'ghee'. Those overweight or with 'Kapha' body constitution are also advised a similar diet.
Post Natal mothers are advised a diet rich in calcium and diary as well as milk products depending on the body constitution of the mother, the type of delivery and breast feeding.
Those with fiery or Pitta constitution, skin irritations, digestive problems may be recommended a raw food or lightly steamed diet with cooling foods.
